Ajiaco Recipe

  • 1 whole chicken, cut into pieces

  • 4 medium-sized potatoes, peeled and diced

  • 4 ears of corn, cut into 1-inch pieces

  • 2 cloves of garlic, minced

  • 1 medium onion, chopped

  • 2 tablespoons cumin

  • 1 tablespoon paprika

  • 1 teaspoon dried cilantro

  • Salt and pepper, to taste

  • 8 cups of chicken stock

  • 1 avocado, sliced (optional)

  • 1 lime, cut into wedges (optional)

  • 1 cup sour cream (optional)

Instructions:

  1. In a large pot or Dutch oven, combine the chicken, potatoes, corn, garlic, onion, cumin, paprika, cilantro, salt, pepper, and chicken stock.

  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 30-40 minutes, or until the chicken and potatoes are cooked through and tender.

  3. Using a slotted spoon, remove the chicken and potatoes from the pot and set aside.

  4. Use a potato masher to mash the remaining ingredients in the pot to thicken the broth.

  5. Return the chicken and potatoes to the pot and let the mixture simmer for an additional 10-15 minutes to allow the flavors to develop.

  6. Serve the ajiaco in bowls, topped with a dollop of sour cream, a slice of avocado, and a squeeze of lime, if desired.
